Cut cabbage, onion and sausage into bite-sized pieces and place in pot. Add seasonings and chicken broth. Cook until tender and serve. MEXICALI PORK CHOPS 2 pork chops Butter Salt and pepper 14 ounces black beans 14 ounces tomatoes 14 ounces corn 2/3 onion, chopped 8-10 pickled jalapenos, chopped 3 tablespoons fresh cilantro 1⁄2 cup brown rice 1⁄2 cup chicken broth 1⁄2 cup white wine 1 tablespoon cumin Dash of Tony Chachere’s Add butter to deep pan or Dutch oven and season pork chops with salt and pepper. Brown in pan on both sides. Remove pork chops and set aside. Mix together remaining ingredients in pan and stir well. Place pork chops on top, cover and place in oven (or outside with charcoal briquettes) 350 degrees for 1 hour. In this video, I am out in the woods to cook up some lunch - a cheese and jalapeño bread baked next to the fire in my reflector oven and a rich French onion soup to dunk it in. There is something very satisfying and comforting about baking in the woods and a reflector oven means you can take an easily packable flat pack oven with you on wilderness trips so you can enjoy some baked treats where ever you make camp. Bread Recipe (full loaf) 1lb plain flour 1lb strong bread flour 1oz salt 1oz sugar 1oz dried yeast 1pt tepid water Mix the sugar and yeast together in a cup with some of you tepid water until it starts to foam. Slowly pour the yeast mixture into your floured salt mix (a ziplock bag makes this much less messy). Add the remaining water, a bit at a time until you have a dough that is firm enough to not stick to your fingers. Kneed for 5 minutes. Cut deep slices into the dough and place it somewhere warm to proof, a bag or cling films helps to keep it warm. Once it has doubled in size, kneed again. Form into whatever loaf you want and bake (reasonably hot oven or dutch oven). Baking times vary depending on what loaf you make, but check after 30 minutes and tap the base to see if it sounds hollow. Enjoy! French Onion soup recipe (Sorry to any French viewers!) 1 large onion 2 sprigs Thyme 1 tbs brown sugar A good glug of red wine 1 stock pot or cube Water Grated cheese Knob of butter Salt and Pepper Fry the onions for around 10 minutes in the butter with the sugar and a good pinch of salt and pepper, until nicely browned and caramelised. Deglaze the pan with red wine and bring to a boil. Add a stock pot and around 1/2 pt water. Add the thyme and simmer for 5-10 minutes. Grate cheese over the top and serve with jalapeño and cheese bread. Best Campfire Snacks 🤍 Cooking Bread on Rocks 🤍 Primitive Cooking – Beef Stew Recipe 🤍 1. Costa Rican Casado Any frying pan or even a pot will do. Does not need to be cast iron. Seer thin sliced steak in olive oil and season with salt. Sweat onions and garlic (as much as your wife will allow). Once onions are sweated, add canned carrots and black beans and Linzano Salsa. Simmer for 5 to 15 minutes while cooking minute rice (follow instructions on box) Here is where you buy Linzano Salsa 🤍 2. Steamed Muffins $12 butane backpacking stove 🤍 Buy any instant mix of muffins from grocery store. The kind that is just add milk. Use water instead if you want. 3. Fire Pit Eggs and Sausage Eggs and precooked sausage with casing 4. Chicken Curry Fry cubed meat and sweat onions. Add Patak’s Curry Simmer Sauce for 10 minutes and put on rice. 5. Breakfast Rice Add shelf life milk until slightly soupy to old rice, with sugar raisins and cinnamon. Simmer for 5 minutes until thickens. Shelf Life Milk doesn’t need refrigeration 🤍 6. Engine Block Hotdogs and Smores Add hotdogs to a KIA Sedona or comparable motor vehicle 7. Japanese Nabe Stew Boil 2 liters of water, add whole clove of ginger and 6 cloves of garlic. Add light soy sauce until flavor is strong enough and then sugar until sweet enough. Bring to boil. Add potatoes & yam bring back to boil, add carrots and bring to boil then add pork short ribs and bring to boil. Then add white and green onions. When potatoes are soft the stew is done. Usukuchi Soy Sauce (Weak mouth soy sauce) 🤍 8. Scotch Egg Prepare the eggs before hand and then bring them camping and just fry them in the field. Pack country sausage around soft boiled egg. Roll sausage in all purpose flour, then egg, then panko bread crumbs. Fry in peanut oil for about 5 minutes. The Kelly Kettle is what I use to boil water and cook over a fist full of twigs. 🤍 9. Tin Foils Dinners Oil tin foil and add potatoes first. Season with garlic salt. Then add small baby carrots. The beans and onions and mushrooms. Then salt and cilantro and olive oil. Make sure you remember to always keep potatoes on the bottom and remember which side is up. Cook over coals for about 20 minutes. Potatoes should squash easily. 10. Ziplock Omelets Beat eggs, onions, pico de gallo, cheese, and whatever you like into a ziplock bag and boil for about 10 to 15 minutes. 11. Lazy Ramen If you didn’t figure this recipe out from the video, then I can’t help you LOL 12. Steak and Vegetables Season asparagus and vegetable with garlic salt and don’t over do your steak. Cast iron skillets help but are not necessary. 13. Heat and Serve Curry Get the curry packages at most grocery stores in the international section of here on line. 🤍 14. Cold Cereal Cereal Bowl 🤍 Shelf Life Milk doesn’t need refrigeration 🤍 15. Roast & Sausage Gravy Sandwich Put rump roast on spit, rub with Montreal steak seasoning and turn occasionally, slow roast for several hours and shave off meat as it cooks. Make the gravey with some country sausage, pinch of salt, loads of pepper, some all purpose flour and heavy cream or whole milk. Put on bread for awesome sandwich. 16. French Toast Soak bread in the eggs for a few minutes to soak up eggs, fry in melted butter with loads of cinnamon and syrup. 17. Fire Pit Corn Put unshucked corn in coals for 5 to 10 minutes or until the husk is blackened a bit and eat hot. 18. Spam and Egg Sandwich Fry spam (the best canned food ever) and egg and toast bread in melted butter. 19. Real Oatmeal Boil water with some dried berries, raising and fruit of your choice. Add Quick Irish oateal (Follow instructions on package) and add some butter and sugar. 20. Biscuits and Gravy Ready made biscuits and Country gravy 🤍 21. Fritos Taco Salad Add fritos with all the stuff you saw in the video and whatever floats your boat. 22. Fish & Chips Catch some fresh white meat fish. Take all purpose flour, a teaspoon of baking powder, a pinch of salt, and a load of pepper then add milk until it makes a thick batter. Fry in peanut oil. Throw in some frozen steak fries into the oil and fry them up too. Eat with malt vinegar. 23. Full Instructions on Campfire Pizza Cooking in only 3 minutes! Baking a Deep Dish Cast Iron Pizza on an open fire is one of the greatest camping meals. It can even be done when you dont have a lid! Heres the Recipe: 2 Cups of Flour 1 Tbsp of Instant Yeast 1 Tbsp of Salt 1 Tbsp of Sugar 1 Tbsp of Olive Oil 1 Tsp of Garlic Powder 3/4 Cup Warm Water. THATS IT! You can pre-mix all the dry ingredients if you want and then just add the oil and warm water on site. I didn't have a lid, or a dutch oven with me. So I improvised and used a Rock Lid! YOU DON’T HAVE TO EAT FREEZE DRIED FOOD AT CAMP! 4 TYPES OF COOKING OVER A CAMPFIRE Read Full Post: 🤍 When it comes to cooking at camp or in the backcountry there is a much better way than simply adding hot water to a bag of freeze dried food. Imagine cooking anything, yes anything over a campfire. From hot wings to spaghetti to even a blueberry pie, it’s all possible. All that it takes is a few simple tips and tricks with the campfire and you can turn camp food into delicious gourmet backcountry cuisine. Boil It, Grill It, Fry It and Even Bake It It’s all possible outdoors When it comes to camp cooking boiling, frying, grilling, and baking are all viable options. All that it requires is a little know how relating to campfire regulation and you will be set! HOW TO BOIL OVER A CAMPFIRE From soups and stews to pasta. Boiling is a great way to cook over a fire. It allows the camper to cook an entire meal in one pot with little to no calorie loss. I mean who isn’t drinking that broth!! Keep the campfire high. Lots of wood and high flames means lots of heat and when we want to boil food that’s important Once your food is to cooking temperature allow the flames to die down slightly. This will provide a simmer and allow you to slow cook the meal. HOW TO FRY OVER A CAMPFIRE With a little oil and a pot/pan wonderful and delicious meals can be fried up. Imagine eating mozzarella sticks on top of a beautiful overlook in the Rocky Mountains! Start out with a low flame. High campfire flames can quickly ignite your oil. As the flames grow low and embers appear in your campfire you should be right to fry. Test your food by touching it to the oil. Immediately, there should be signs of the oil sizzling and frying the food. Maintain your fire by feeding small sticks into it. If the oil seems to be getting to cool add a few large sticks for a quick supercharge. HOW TO GRILL ON A CAMPFIRE Steaks, fish, even corn on the cob can all be grilled over the campfire. Grilling offers an easy, and quick, way to prepare your meal. Before you start to grill get a large fire started. Keep the fire large for a generous amount of time as this will build a bed of hot embers. Also Read: Chickpea Salad Recipe from Pow and Chow Book Grilling is a fast processes and shouldn’t take long. It is important to keep a well regulated heat during this time. Embers, not flames, provide the most even heat when cooking. Flames will char/burn the outside of your food and leave the inside raw. Choose the wood you cook on wisely. It is important that you do not cook on wood that contains a lot of sap, such as Pine or Hemlock. This type of wood leaves behind a lot of unfavorable tastes. HOW TO BAKE ON A CAMPFIRE Pies, Stromboli, or just warming up some buns can all be accomplished by baking. For this technique we can set out UCO Flatpack on its side and capture radiant heat. Baking is a slow process and shouldn’t involve flames. When baking over a campfire be sure to rotate the items often and flip them if possible. So instead of making a traditional pie made a folded turnover. The same as grilling try to choose woods that don’t have a lot of sap content. Although the food isn’t being cooked over the flames/coals we don’t want to get too much of that black smoke all over our food. Spice up camp life using these tips and tricks. Primitive cooking. Cooking beef stew, corn bread and corn on the cob over a fire in the woods. The beef stew was made from scratch, including making beef bone broth. Here are the recipes: BEEF STEW RECIPE Put beef bones, carrots and onion some salt and pepper in dutch oven and roast for about 1 hour or until bones are browned. Transfer contents of dutch over to big campfire pot and cover with water. Add beef rib sections and simmer or boil for 5 hours. Strain liquid over cheese cloth or fine mesh strainer and pick all meat off bones. Season meat with salt and pepper and set aside. Put strained broth back in kettle and boil for several hours and reduce broth until it is creates a strong beef flavored broth. Cube chuck streak, season and brown in cast iron. Add flour until juices thicken to gravy. Then add remaining broth and add garlic, jalapenos and potatoes. Bring to a boil then add rosemarry, sage, and basil, bay leaves, pepper corn, carrots, ocra, green beans green onions, red onions in that order. Cover and bring to a boil for 5 to 10 minutes or until potatoes are soft. Remove herbs and then simmer until ready to eat. If broth has not thickened, continue to simmer or stir in some more flour. Add chopped cilantro before serving. CAMPFIRE CORNBREAD 1 part all purpose self rising flour and 4 part fine corn meal (yellow or white) A teaspoon of salt, cayenne pepper to taste, 4 eggs, 3/4 stick of melted butter. And then add buttermilk until the batter flows freely. Pour mixture into hot dutch oven coated in butter with small pool of butter in bottom. Bake until outside is golden brown and poke center with stick and see if batter sticks to it to test whether it is done. Take about 30 - 40 minutes to bake. CAMPFIRE CORN OF THE COB Put whole corn on hot coals and flip them until the outside is blacken. In this video, I am out in the woods with my four legged companion Maggie to cook up an Easter feast of braised lamb in red wine. Sat on a grill over the campfire in my cast iron dutch oven, it cooks slowly ensuring the meat is lovely and tender, gently simmering away in a stock of red wine, garlic and rosemary. Hello, the weather is starting to cool off so it's time to start cooking over the campfire again. In this episode I knock up an all day breakfast using the Finnish wilderness pan; the Scandinavian woodsmen would've eaten straight from the pan so there's no need to carry extra equipment into the woods, so that's what I done. Unfortunately Woodland Ways no longer stocks the Finnish wilderness pan but similar thin blue iron pans with folding/detachable handles can be found on the continent if you spend a while on Google to find them. Some are easy and some are more gourmet but here are some great foods and meals for camping. 23 Best Camping Recipes 🤍 Best Campfire Snacks 🤍 Camping Cooking Video Playlist 🤍 RECIPES 1) Cheese Steak Sandwich Check out how to make the wok I used here 🤍 2) Eggs Benedict with homemade hollandaise sauce Place a bowl over a steaming pot and melt 4 Tbs of butter. add 4 yolks to the butter and stir constantly. Add 1/2 lemon worth of juice and the sauce will start to thicken. DO NOT STOP STIRRING!!!! attack any clumps that form. Add a pinch of salt and add cream a little at a time until you get the consistency you want. Keep the sauce on the steam while stirring for 3 to 5 minutes until the sauce stops getting thicker. cook some bacon extra crispy and toast some English muffins. Poach some eggs in boiling water. Assemble and garnish with paprika and chives. 3) Flat Bread on A Rock: Cook the bread for 3 to 5 minutes. It will start to puff up a little and brown when its done. 4) Brownies and Ice Cream: If its colder you can stir it more without melting it and so you'll get truly creamy ice cream. It was 34F in this video. 5) Lobster Rolls and Potato Chips: Remember to wash off the starch on the potatoes and dont over steam lobster. 3 to 5 minutes is plenty. 6) Kabobs You can also try Bacon wrapped shrimp, Pork and apple chunks with a little salt and sugar sprinkled on, Meatloaf kabobs, ect. 7) Doughnuts: use canola oil or peanut oil (peanut oil is best) make sure the it bubbles weakly and takes 3 minutes or so to brown or it will be raw inside. Honey butter, cinnamon and sugar, pie filling, nutella, pudding cups are all great alternatives to powdered sugar. 8) Corn dog recipe Here is the Corn Dog Batter Recipe 1 cup corn meal 1 cup all-purpose flour 2 tablespoons sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 large egg 1 1/4 cups buttermilk 2 tablespoons butter melted 9) Popcorn Balls If you can't figure this out from the video just swipe a rice crispy treat recipe off the internet and use popcorn instead. Very easy. Hardest part is popping the popcorn so if you struggle with that just bring popcorn from home, old popcorn tastes great in popcorn balls. 10) Crab Legs 4 Tbs of butter 1garlic clove 1 sprig of rosemerry melted together. This works with snow crab too 11) Brioche French Toast You can buy brioche loafs at walmart and most grocery stores in US. The batter is just beaten eggs though you can get fancy and mix vanilla and milk and sugar. Make the slices 1 inch thick and soak them for a minute or more in egg. Fry in butter. Serve with maple syrup or nutella or powdered sugar and lemon or peanut butter (if you are from west coast) 12) Bulgogi Fajitas This is probably my favorite recipe on this list. You can get bulgogi marinade on amazon.com. Crush garlic, slice thin bell peppers, and cut up chunky bits of onion. Fry them in pan with the marinated meat until meat is cook through. Serve on tortilla (short grain rice optional) 13) Steamed seafood. Pretty self explanatory. Got to have the old bay seasoning though. You can add shrimp, sausage, corn, red potatoes, green or yellow beans, brussel sprouts, squash whatever to steam tray. 14) Peruvian chicken Here is a more detailed video about how to make this from scratch. 🤍 15) Blackened Catfish Just get that pan SUPER HOT and use lots of butter and you'll be fine. 16) Blackened catfish tacos. Got to have the avacado and pico with it. Rice and bean optional 17) Japanese Curry Many groceries stores sell japanese style curry base. You can also get online at amazon.com. 18) Salmon You got this 19) Fondue The key is to use good quality cheese (Jarlsberg, Gyuere or other swiss style cheeses) melt the shredded cheese a little at a time. Add starch if you used too much broth, use more lemon is its clump and separated looking. Use a very low heat to just barely melt cheese. 20) Citron Tea and Pomegrante Vinegar You can buy these online through Amazon.com or at Asian supermarkets. 21) Jambalaya, Just follow instruction on mix box. Zatarans makes an ok jambalaya mix that you can find in most US grocery stores. 22) Glazed Carrots Really quick and easy and very tasty. In this video, I will be going through the campfire grills, grates and fire anchors that I use when camping and cooking over an open fire. Although not essential for campfire cooking, a grill does make life easier when cooking meat, fish and vegetables over the fire and for supporting cooking pots and pans. They provided a stable platform on which to cook and they can be adjusted to take advantage of heat control while you are cooking. I have a few grills that I show in this video, although there are many to choose from when looking for one to buy, some good, some less so. Hopefully this video might help to give you some pointers and tips for when choosing a grill for your adventures into the outdoors. I hope you enjoy the video, Thanks for watching. Pie Irons are so fun to cook with while camping and here are 4 delicious recipes. Make a savory pie for lunch or dinner and then a sweet pie for dessert. My favorites are Philly Steak and Cheese, Pizza, Caramel Apple, and Cherry Cheesecake Pies. Using canned biscuits or crescent rolls are a great option but you can use sliced bread or flour tortillas also. The different kind of pies you can make depend on the ingredients you use. So be creative and have fun!
